Hi, I ' m new to the board, but not to Atkins ( sticking my toe in the water quick, already! ).... and I just have to say, I know how you feel. I don ' t think it ' s detremental at all if you eat the cooked veggies for a couple of days. In detail, you might start up your taste buds again. Mine get pretty bored if I stay on the same veggie track. But we need fiber and the fresh veggies provision the fiber [ / icon_wink. gif]
Pumpkin is on the " other " side of the list of veggies and a great resoure of vitamin ' s... 1 serving of warmed pumpkin w / cream cheese, cinnamon, and if you can handle Splenda, a packet of it.
Hope that helps!

It doesn ' t really matter if you have your vegs cooked or raw. Raw are just better for vitamins and minerals.

Yes, raw is generally better, but your body is able to make use of some nutrients better when they come from cooked foods.
Spinach, for example. If you cooking it slightly it releases the carotenoids like beta - carotine so your body can make use of them. Cooking increases the lutein levels in spinach also. On the other hand, heat can lower the amount of vitamin C and folate you get from your spinach. So, it ' s best to have some cooked and some raw.
For variety, though, eat your acceptable list vegetables in any form you want, as long as it is low carb. I ' ve heard some people grill wedges of lettuce, but I don ' t know if I would try that.
