In most carb counters you will find number of grams of carbs per cup of a vegetable. I use this database: http: / / www. nal. usda. gov / fnic / cgi - bin / nut_search. pl and it provides values per cup, per 100 grams and in case of solid vegetables also per piece ( so e. g. for celery you would get the value per stalk ). If you know tere are 4 carbs in a cupful of a given vegetable, you will know how many cups you can / have to eat to reach desired carb count.

And if you ' re familiar with the metric system, most carb tables show carbs / 100g. I ' m using a counter at home. IE: celery has 2. 97g / 100g so you could eat 500g of celery a day ( if you don ' t eat any other vegetables )
